I have seen many types of edible wreaths featuring herbs and fruits, but after an idea was sparked on the Cook's Illustrated Bulletin Board, I decided to tackle meat as the medium. I'm not much of an artist, but gave it the ol' college try. I think it could be done better using different kinds of meats (more salami and other round shaped meats), but I was limited by our office holiday party needs and budget. So here is what I devised:
You will note the bacon bows. I did about as well with them as I do with ribbon or cloth bows, which is to say they sucked. Also, I didn't take these photos and other folks handled the trays after I dropped them off, so some shifting of the "berries" occurred. They looked a little better when I handed them off than when the photos were taken.
Everyone really like them and especially liked the fact that you could get just one piece of meat without a bunch clinging to it like when you purchase the trays from the grocery store. I would call these a qualified success. I may try again later with some different meat products and see if I can do better.
