Great article. I adore working with meringue, except when it's raining! If you have not tried making Pavlova, do so -- the sugar balance and technique yield a cloud-light meringue that's crispy on the outside and chewy on the inside. Usually formed into a container and filled with whipped cream and fruit, they are one of my favorite summer desserts.
